Preheat oven to 350 F.
Dip chicken in egg white and gluten-free bread crumbs seasoned with Italian seasoning. Put into 13 x 9 pan.
Melt butter and mix in garlic, vinegar, juice, paprika, parsley in a small pan over low heat and simmer until sauce is reduced.
Drizzle sauce over chicken and bake for 30 minutes.
**You can freeze the egg yolks for later.
1 lb chicken breast, boneless, cut into wedges
2 eggs, separated, (lightly beat the whites)
½ cup butter
1 TBS garlic, minced
⅛ cup white balsamic vinegar
⅛ cup apple juice
¾ tsp paprika
1 tsp parsley
