A handy snack to keep in the freezer! Scale up the recipe as needed.

  • Cook: 20 mins
  • Yields: 8 servings

Directions

Heat oven to 400 F.

In a medium mixing bowl, add in all ingredients and mix well. Mixture should hold together and be nice and sticky. Add water as needed to get the correct consistency.

On a greased baking tray, scoop and make little mounds, then flatten them with a fork.

Bake for 15 to 20 minutes. They should not be mushy.

Ingredients

1 cup sweet potatoes, cooked and mashed

1 cup oats, rolled

¼ cup shredded coconut

1 TBSP coconut oil (or extra virgin olive oil or a nut butter)

1 tsp cinnamon

½ tsp ginger
