A slightly spicy and zesty meal based on Creole cuisine.
Place all ingredients in the Crockpot® and stir to combine. Cook on low for 8 – 10 hours.
If you prefer, you can use leftover rice. Make sure to decrease the liquid or it will be more like soup.
**Whole Foods makes unsweetened chicken sausage.
½ cup onion, chopped
½ cup green pepper, chopped
½ cup celery, chopped
1 TBS garlic, minced
½ cup scallions, chopped
1 ½ cups chicken, uncooked and diced
1 ½ cups Andouille sausage, or other spicy and smoked sausage**
2 cups tomatoes
½ cup tomato paste
1 cup chicken broth or stock
1 bay leaf
½ tsp salt
¼ tsp cayenne pepper
1 cup brown rice, uncooked and rinsed
