Hi {!firstname_fix}

While I was on vacation in Maine, I saw baby Franklin in his new forever home. What a great situation. Here is Diane's description of his homecoming:
Linda, John and I set out at 7am in a minivan rental, with my *diaper bag*, a loaded cooler, and Jill..Kathleen's Garmin GPS (thank you!!!) who was *fabulous* (and I want one!! lol). And Franklin was such a good boy on the trip home. He was tuckered and slept a good part of the way, and the rest he rode really well with only 2 very brief screaming episodes. And OK- the first one freaked me out, and special thanks to Linda for making sure we were both OK. :) Following a stop at Whole Foods in Portland for dinner, we got home around 8:30pm last night. Lonnng day/ great road trip!

Our first day home went really well yesterday, and we had fun playing follow the leader in a big oval with him staying right with me. I can see that I'll be getting a lot more exersize. :) Linda and I did chute with him... in his new chute that has purple foam bumpers on the ends. And we worked on a temporary ramp until I can have a bigger one built, since he's going to be too big to carry down the steps before too long. He has a new kiddie pool to splash in and do step overs here, which I will fill for him today. And he will get a lifejacket soon so we can go swimming and do aquatherapy.

And wow is he ever enthusiastic about food! LOL. I snuck a baby kong with peanut butter into his big wire crate to see how long it would take him to find it...not long! And then he went nuts when I brought burgers in from the grill last night. For a little guy that just recently started sniffing - I would say he can smell beef from the next room now, heh. While he is a voracious (feeding frenzy) kind of eater, he left his breakfast to seek me out when he heard me talking to Linda this morning. Wow.

Nice story, eh?

Getting Started with Limited Funds (1 week) is a special free class for those of you with limited funding who are trying to make do. Come hear some fun ideas to maintain your humor and find tasty and inexpensive solutions.

Step 6: Planning Your Detox (2 weeks) is a class for those of you getting ready to detox or having detoxed and wondering why it is so hard after. We talk about *the flat*.

Step 2: Journal, An Introduction (1 week) will teach you the basics of journaling. The class will give you step by step instructions in how to record your food and feelings in a way that gets you excited.

Using the Resources of the Community (1 week) is for those of you who are brand new and would like to find your way around town. Come sit on the top of our double decker bus for a guided tour. And even if you are not brand new, this is a really fun class to reconnect with all the treats of the community.

If you are on disability or low income (your household income is less that $1000 a month), you may take classes for free if you get certified. I have put the guidelines for certification on the class schedule page.

A number of you have asked me how the classes work. Check the class list page for more information on this. The classes are done online and you do not have to be at your computer at any set time. It does not matter whether you are in the US, Europe, the Far East or Australia, you simply respond on your own time. And although I advertise that the classes are one or two weeks, sometimes we are a little flexible and they may run longer.

And please go read the questions and answers before you write to me. If you have trouble getting through the process, write the tech forum.

On the "eating the rainbow" veggies...if I am eating them raw I find that if I prep them so I can grab and go it works better for me. I also tried Diane's idea of pouring boiling water over broccoli and cauliflower and it works really well :) not cooked, not quite raw.

I just love your term *eating rainbow*!

I met a fellow radiant today at a local and very lovely cafe constructed from materials salvaged from the old paper mill that the building used to be...that serves primarily white artisan (and fairly exotic) panini's and salads (and sweet things). I said, "Let's see what we can build," surveying the various ingredients in their dishes. I ordered a baby spinach salad with bacon, and feta and asked them to add kalamata olives, turkey and cashews. I had a box of aunt gussies spelt flats crackers in my bag - so I knew I was all set there. When they brought my meal is was in a big giant pile on a wooden board. And it was sooo delicious. I couldnt stop eating the spinach! I kept thinking ..I can't wait to tell Linda! LOL. And that is another new veggie for me. :) And as I was eating, I got to watch a bald eagle exploring the river. That was soo cool.

**Radiant Kitchen**


Breakfast Roll-up



Ingredients

  • 1 6” whole wheat flatbread, pita or tortilla
  • 3 eggs
  • 1/4 c. shredded mozzarella cheese
  • 1 TBS toasted onion flakes
  • 1/2 cup of meat, fish or chicken
  • 1/2 cup of veggies, potatoes, grains, beans or things such as chilies to taste
  • Salt and pepper


Directions:

  1. Warm the bread
  2. Scramble the eggs with the onion, cheese and salt and pepper
  3. While eggs are cooking, add other items of your choosing
  4. Roll mixture and then place in microwave on high for 2 minutes.

I quickly read the manual when I first signed up, skimmed it online. Printing it and going over it closer reminded me that there are some things I have not yet checked into, free resources like the 'New Info' area. I look forward to reading those things!

(I had never been a member of any group or chat online before RR. So you taught me everything I know, LOL, and I feel *very* comfortable doing what I am doing here, yeah!)

As in all your writing since day one, Kathleen, you have made me feel completely at ease and able to learn. I do really appreciate the style geared to newbies. I was not very computer literate, but I also was not ever feeling patronized or belittled in any tutorial areas. Thanks for that!

Same goes for chats. I have enjoyed the few I have been able to attend since signing up a month or so ago. I like the style, feel I can participate. I am still learning I need to put names in to identify who I am answering, and also still struggle sometimes to see who other people are referring to in their comments. Generally, I find chats to be great fun and informative! (Even though I am a self- taught typist! LOL)

I have spent a great deal of time over the past 6 months looking at and participating in forum, up to 12 lists, and some archives. I *love* that the archives are all there for everything so I can probably *never* run out of encouraging things to read and learn from.

A lot of us have difficulty saying “No.” This list, offered with compassion and a little humor, will help you get comfortable with turning people down, refusing to answer nosy or offensive questions, asking people to stop doing something you don’t like, and telling others you disagree them.

As you develop your “No” muscles, see if you can shift from saying “I can’t” to forthrightly saying “I won’t.” Also try exchanging “I don’t want you to…” for “Don’t….” You will feel vastly more empowered -- and have more time for yourself and the people you really care about when you do.

When Someone Asks You To Do Something For Them or With Them

  1. The enthusiastic (polite/helpful/etc.) part of me would like to say yes, but the rest of me is overcommitted (more realistic/unwilling/etc.).
  2. I don't know. I'll have to think that over.
  3. I wish I could help you out, but I’m overextended/overcommitted right now.
  4. I'm going to pass. I'm really trying to slow down my pace these days.
