I am postponing the Diabetes class that was scheduled for this week for two weeks.
Brain Chemistry: Beta Endorphin (Week 2) will be continuing.
Back to Basic 2 (Back to Basics 1 is a prerequisite) will be accepting any of you who have completed the first class...come back for a tune up.
Step Three Meals is one of the staples of our classes. This is a hard step and this class will walk you through the details.
A number of you have asked me how the classes work. Check the class list page for more information on this. The classes are done online with one lesson each day. You do not have to be at your computer at any set time.

** Testimonial for the Week**
As a fellow SS'er, I hesitate to tell you to calm down, but calm
down. :-)
I started the program, I lost weight, then on step 3 I started
gaining weight. I told myself to calm down :-), and whenever 'diet
head' came to visit, I kept the visit short. I put my trust in the
program, and kept reading the groups and forum. When I started the
program, I also thought I would be one of the people who would be a
failure at this, because nothing else had worked for me.
About a month ago, it dawned on me that losing weight was the least
of my worries. It would happen on step 7 and I was free to enjoy
working on step 3. That is the most freedom I've ever felt. I don't
have to race towards some goal at the expense of my body and peace of
mind. Every time I thought I had step 3 down pat, something else
would come up and show me I needed to pay a little more attention.
Step 3 is the playground of this program. You can spend time in the
sandbox building castles, climb the monkey bars, or just sit on the
swing. As adults we rarely get that much chance to play.
Pick one baby step of step 3 that appeals to you and concentrate on
that. Don't worry about all the other parts. As you work with the
baby steps, they work with you. Climbing to the top of the monkey
bars feels really hard, but stepping on the first rung is manageable.

**Recipe of the Week**
This is from the Radiant Recipes Cookbook.
BRAISED RED CABBAGE WITH APPLES AND PEARS
- 1 medium head red cabbage, shredded
- 1/2 c. diced onion
- 2 firm pears, peeled, cored and chopped into 1/2 inch dice
- 2 sweet apples (Delicious, Fuji, Gala), peeled, cored and
- chopped into 1/2 inch dice
- 2 T. olive oil
- 2 T. raspberry vinegar*
- 1/2 c. unsweetened apple juice
- 1/4 tsp. black pepper
- salt to taste
- 1/2 tsp. marjoram
- 1/2 tsp. thyme
- 1/2 tsp. caraway seed (optional)
In a large dutch oven, heat olive oil over medium high heat. Add onion and saute briefly, until onion becomes translucent. Add apple and pear dice and saute until fruit loses its raw appearance, 3 - 5 minutes. Add cabbage (in batches, if necessary), pepper, marjoram, thyme and optional caraway. Toss to coat cabbage with other ingredients. Quick saute until cabbage loses its raw state but is not soft. Add vinegar and juice and cover. Let steep over medium heat until all the flavors are blended, 5 - 10 minutes. Uncover; taste and adjust seasonings, if you wish less liquid in dish, reduce juices over high heat until mixture reaches desired consistency. Makes 6 - 8 servings.
Note: If raspberry vinegar is unavailable, substitute with another "fruity" vinegar, such as apple cider, golden, balsamic, sherry, or red wine vinegar. Do not use distilled white vinegar, as the taste will be too acidic [Naomi's note: never use white vinegar in cooking - but it is great for cleaning your kitchen :-)]

**Your Last Diet: More Than What You Think**
We have been having a lot of fun at Wednesday Chat. I decided we need a little rest from just weight loss and doing the steps topics. We explored the biochemical changes that happen when you do meditation - more than just reducing cortisol and making you more able to lose weight. Soon we will be talking some about insulin resistance. Overall, I would say Wednesday night is the highlight of my week. Our dialogues give me a chance to hear your thoughts in person. Thank you so much!
