1 ¼ cups whole-wheat pastry flour
½ cup wheat germ
2 tsp. baking powder
2/3 cup unsweetened cocoa (or carob)
¼ cup oil
1 ¾ cups orange juice (or apple/another juice)
½ cup milk (oat, cow, brown rice)
3 eggs
1 tsp. vanilla flavoring (from RR store)
Preheat oven to 325°F. Grease 9” x 13” pan.
Place flour, wheat germ, baking powder, cocoa, oil, juice and milk in a large mixing bowl. Beat until
smooth. Add the eggs and vanilla and beat until thoroughly mixed. Pour into pan and bake for approximately 35 minutes or until the top springs back when lightly pressed. Cool, cut in half. Spread cheese frosting over one half and top with the other half. Cover entire cake, top and sides, with plain unsweetened whipped cream.
Cheese Frosting
½ cup whipped cream cheese
¼ cup almond butter
¼ regular size banana, mashed very well
Mix cream cheese and almond butter and microwave for a few seconds to soften to spreading consistency. Add mashed banana, mix very well and spread on half of cake. (You could double this and use it to frost the entire cake).
Unsweetened Whipped Topping
1 small container of heavy cream
1 tsp vanilla flavoring (from RR store)
Whip chilled cream and vanilla in a chilled bowl with chilled beaters until stiff peaks form.
