I am gluten free also and it is work to be gf AND eat only wholgrains, for sure.
I make my own pizza crust as a treat, though, and it is fantastic.
3 cups Brown Rice Flour
1/2 teaspoon Xanthan Gum (sp?)
1 pack of yeast
6 tablespoons olive oil
1-1.5 cups of warm water
Just a little bit of vitamin C powder if you have it (helps the yeast).
Mix BR Flour with Xanthan Gum and yeast, then put olive oil in, knead. Then pour the water in, slowly, knead and see about the consistency. When it’s not sticky, but holds together well, it’s good.
Put to the side, cover with a towel. Let stand for 15 minutes. I prepare the other ingredients in that time and pre-heat the oven.
Knead again and then spread on a baking sheet. Cover with your favorite toppings – voila!
