1C Brown Rice Flour
1/2 C Sorghum Flour
3/4 C Oat Flour
2t baking powder
1/2 t baking soda
1t xanthan gum
1 heaped teaspoon cinnamon
1t vanilla (I am liberal with this, it is probably more like 2t)
3/4 C milk (any kind, I use cows)
1/2 C pineapple juice
1/4 C oil (canola or rapeseed)
2 mashed bananas (I like to puree them so they are liquid)
1 C (ish) blueberries
2 eggs – separated and the whites whisked til soft peaks
Mix all the dry ingredients together and then add in milk, pineapple juice, oil, bananas and blueberries. Mix.
This should give you a pretty wet mixture, but if it seems too dry add some more milk or pineapple juice. Fold in the whisked egg whites last, and this should now be quite a smooth wet batter.
Spoon into muffin cups. Bake at 180 deg celsius for 25-30 minutes, until golden brown.
