Cheddar Cornbread

A simple variation of cornbread that is easy to make.

Directions

Heat oven to 375 F. Place an 8 X 8 inch lightly oiled glass baking dish or a cast iron pan in the oven to heat up.

Place the cornmeal in a large bowl and toss with the Cheddar cheese.

Place the buttermilk, melted butter or oil, eggs, apple juice concentrate and baking soda in a blender, processing on low to medium speed until combined.

Stir the buttermilk mixture into the dry ingredients until smooth.

Take the preheated baking pan out of the oven and pour in the corn bread batter. Place baking dish back into oven.

Bake at 375 F for 20 to 25 minutes, until golden brown.

2 cups whole grain cornmeal

1 cup shredded cheddar cheese

1 ½ cups buttermilk

2 TBS melted butter or corn oil

2 eggs

1 tsp unsweetened apple juice concentrate

1 tsp baking soda
