Hi,

What I have done is replace Kathleen's baking mix for the flour in recipes, and leave out any leavening, because the mix has the leavening in it. I've also done the same thing with waffles. Other flours are fun to substitute too...one of my favorites being brown rice flour and buckwheat flour.
