I made a lot of things like that when I was first starting out without sugar. If you look in the recipes in the resource center, I think some of my dessert recipes are posted there.
I will use banana bread of muffins as my brown at breakfast, but for some reason, if I have cake or something with another meal, I have it as dessert instead of a brown, even though it is brown. Maybe that's because muffins feel like a natural part of breakfast (in fact, they used to be my whole breakfast before the program) and cake was always a dessert. One of my greatest pleasures was having ricotta cheese cheesecake for breakfast early on - it felt really decadent to have cheesecake for breakfast, but it had plenty of protein.
