How frustrating to have that reaction to the shake! I know you will find a shake recipe that works for you.
Here's what I can contribute on the oat milk question, more an additional question than an answer perhaps:
I just bought some oat milk for the first time, based on people on RR speaking highly of it. I found the Pacific Original kind. According to it's ingredients it contains water, oats, oat bran, sea salt, gellan gum, riboflavin, vitamin a and vitamin d2. No added sugars. But when I got home and tasted it I was shocked by how sweet it tasted. And looking on the RDA data (which I guess I should have checked in the store) it contains 19 g of sugars per 8oz. The soy milk I usually use contains 1g, milk contains 12 g (and I find pure milk in the shake is not great for me).
So I'm curious if perhaps the type of oat milk you used simply has too much sugar for you for first thing in the morning. It definitely does in my case, I am not even going to try it in the morning, I can absolutely guarantee it would have me shaking and weepy about 2 hours later.
I'd be interested to know if folks have found an oat milk with lower sugar content and if anyone has insight into how the Pacific original version can have so much sugar per ounce even though it's unsweetened.
