I think you are doing really well and working on one part of breakfast until it becomes something you want and like to do is a great idea The part you are working on is having it every day. I don't know how soon you have breakfast i.e. whether you have it within an hour of getting up or not, but that is another part of breakfast you can work on later unless you are already doing it.
1/2 cup of Tofu (firm) = 20 gms of protein
1 cup of Adzuki beans = 17 gms of protein
1 cup of Greek yogurt = 18 gms of protein
so you really can get a lot of bang for your buck with these.
These things are also complex carbs or browns: kidney beans, black beans, garbanzo beans, hummus, lentils, millet, pumpkin seeds, sunflower seeds, polenta, quinoa, aramaranth, kamut, whole wheat cous cous.
You may certainly eat as much white rice as you like - particularly if it gets you eating breakfast and perhaps other meals! I used to always eat white rice and then switched to brown rice and have found I love it better than white now, but it's a process.
There is no set time line for achieving a step and usually slower is better. With some steps I took months and with others only 4 weeks. It all depends on how difficult a particular step is for you. I found step three to be huge and I had to learn so much - like how to cook lol
