Oatmeal is a great complex carb for breakfast, but soy or almond milk wouldn't have nearly enough protein. I've heard of people stirring cottage cheese into their oatmeal, and I would bet greek yogurt would work too. You can sweeten it with anything you want at this point. I like to cook fruit in my oatmeal and then add some nut butter, but that isn't nearly enough protein to be my only protein source for my meal.
However, you don't have to start off doing all 4 parts of breakfast at once. You can work on whichever is easiest, then add in the next when you have that one mastered. So, if you are just getting used to eating breakfast at all, oatmeal would be fine. You could even add some nut butter and mix some greek yogurt or protein powder into the milk to add a bit of protein.
