I really like the taste of whole wheat breads much better than white so that was not so difficult for me. You can find 100% whole wheat bread in the grocery store that is "mushy", maybe not quite as mushy as "Wonder bread" but not so course either.
I have gotten away from having bread with breakfast. I now have plain oatmeal on the side with a flavoring from the RR store. But it has been a true evolution. I started with flavored instant oatmeal, then moved to Bob's Red Mill products like Oat bran, multi-grain and Cream of Buckwheat. Finally I decided just to try plain oatmeal and found I liked it a lot. Funny cuz I used to hate oatmeal and thought it tasted like wheat paste.
When I have a sandwich for lunch I use 100% whole wheat bread, but in the last few months I have switched to eating a "supper like" meal for lunch. This seems to hold me a lot better
I would concentrate on finding a complex carb that you really like and then I think the white bread will not even bother you.
