I have a soy shake myself ( I am of a certain age, and soy may be useful for me ) for a young person I have often read the advice to combine a soy shake with almond or other nut milks, or consider Restore from the store which may just suit.
I have been gluten free for years now and its fun finding the things that work for me.. I am a bean queen for a start but theres also things like buckwheat, gram flours and theres nothing as versatile as potato
as for breakfast, I tend to eat the same thing for aeons for breakfast - shake, but I vary the brown - its just so convenient. Finding what amounts was a challenge ( I was scared of brown) but had lots of help
