I would first try much smaller amounts of potato or sweet potato. You might try to keep the amount steady for a bit, and see what happens. Something that personally worked for me was to have a protein / complex carb before bed. My blood sugar was very volatile, and having that extra snack really helped to stabilize my blood sugar. I was wishing the potato would be magic for me...but it turns out steady food is much more important.
