The salad is all packed in one container. We use those storage bowls from the store that come in packs of 3, the thin plastic ones. I think Glad and Ziplock make them. First I put in a little rubbermaid container of dressing. Then I put in the greens (romaine, kale, bok choy, Italian parsley) then cherry or grape tomatoes, baby bella mushrooms, celery, and cucumber. Then I add cut up grilled meat, or tuna, spoon in some brown rice or quinoa, and then add a sandwich bag with some roasted unsalted sunflower seeds. I pop them in the fridge and we grab them in the morning. Lately when we grill portobello mushrooms, we've been putting the leftover in the salad. Steamed or roasted beets are also yummy in salad.

: Hi Allison,

: I liked hearing about your work lunch
: and how you dealt with the packing
: oversite and then planned how to
: take care of yourself in the
: future.

: I also liked your toad joydot! :h22)

: I have a question about your lunch
: salad. When you fix it up ahead of
: time, do you pack up the meat,
: brown and lettuce in one
: container? I'm trying to think of
: something easy and tasty to take
: to school for lunch on my teaching
: days, and I'd like to be able to
: make it the night before or maybe
: even a day or two before. Your
: salad sounded so good.

: Thanks! :h9)
