I liked hearing about your work lunch and how you dealt with the packing oversite and then planned how to take care of yourself in the future.

I have a question about your lunch salad. When you fix it up ahead of time, do you pack up the meat, brown and lettuce in one container? I'm trying to think of something easy and tasty to take to school for lunch on my teaching days, and I'd like to be able to make it the night before or maybe even a day or two before. Your salad sounded so good.
