There are lots of gluten free options out there. I have found gluten free breads and english muffins in the freezer section of the health food store. And Crunchmaster makes some really tasty gluten free crackers. The plain ones are the best.
There are lots of gluten free browns - legumes, brown rice, wild rice, sweet potato, buckwheat and millet are some of them.
So, it's not as hard as it seems, and you will feel much better once your body adjusts.
