I completely understand your frustration. I was a big pouty baby when I first learned everything I had to give up. I've been GF since 1999, and have never looked back, after I realized how it was affecting me.
Kari's right, there are a lot of options on the shelves these days and even in restaurants. However, I've found that many of those options are not very brown, so that is something you need to look out for.
I don't know where I'd be without brown rice. I love it whole, but I also love baking with the flour. And I buy Food for Life brand brown rice English muffins and tortillas, and Tinkyada brown rice pasta is yum!
There are several other GF grains, like millet and amaranth, but I haven't developed a taste for those. You can also skip the grains and use beans and potatoes for your browns.
Take it easy and try not to get stressed about it. It is quite a major life change, I know. But if you keep track of whatever symptoms you are trying to alleviate, I think that will make it a little easier and seem more worth the effort.
