That is great you have found out your are gluten intolerant. A lot of people have symptoms and never connect it to a food they are eating. I suspected I as gluten intolerant quite a long time ago but didn't consistently keep away from it until about 3 years ago and I feel much better for avoiding it. Often we tend to crave the foods that we are intolerant too so it does seem like we are going to be really deprived if we don't have them. But once we stop having them and start to feel better we actually don't want them any more.

Some people seem to experience withdrawal symptoms that may last up to a couple of weeks from going off gluten too.

There are quite a few gluten free grains such as quinoa, amaranth, wild rice, rice and millet. Some people are able to have oats but I find they put me into a sort of sleepy, dazy coma so I avoid them. There are a lot of different types of gluten free pasta and breads out there but it does take a bit of experimenting to find the one you like best.
