When I wake up in the night and can't fall asleep, I don't eat until I actually get up, unless I am hungry, in which case, eating helps me fall back to sleep.
Peanut butter is probably not the best choice for protein - have you tried eggs or a protein shake or something along those lines? The problem is, most people would need a lot of peanut butter to get enough. I use it sometimes to add a little bit of protein, but not as my main protein source. Still, it's a good start.
Kathleen changed the steps from the original book because she found that people had more luck with the journal if they had breakfast first. It helps stabilize blood sugar and helps people focus. There's a new updated version of Potatoes not Prozac with has the revised steps and incorporates a lot of things Kathleen has learned since she wrote the original book.
Fasting or a fruit only dinner are pretty much biochemical and blood sugar disasters for sugar sensitive people. I am not surprised that you woke up hungry!
