Like everything with the program when things go wrong like this it is all a process of elimination for the cause.
A suggestion - You could try having a protein/complex carb snack during the work with the horses to see if it is too much exercise. Of course too much exercise could also cause you to have too high BE and then be heading for a crash. This wouldn't usually show itself in me until at least day 3, (events tend to affect me on day 3's, but foods seem to always affect me on day 4's) but it may be different for you.
Only try one solution at a time, so that you know which one is the correct solution. I would see if you can get the food/timings exactly right this Sunday, and then still wait until the next week to try anything else. For example, if you took an allergy pill on Wednesday, after getting the food right on the first Sunday, and then felt fine the day after the horses, you wouldn't know if the allergy tablet was necessary or not, and as all medications would have an effect on your chemistry, you don't want to take something that you don't need.
So I would work on getting the timings spot on first, and then if that does not work, try the allergy pill the following week, and then maybe the snack the week after if it still isn't sorted out.
