You can make your own turkey sausage for sausage patties. I've done it often, and it's not hard. You can make a big batch, freeze individual portions, and have what you need.
There are lots of recipes online. We have several good ones in the files for the Step One list. If you join the list, you have access to the files. And you get to talk to lots of people about breakfast!
