My four lunches were: salad with tuna, brown rice and veggies like broccoli, bok choy etc, salad with salmon, brown rice and summer squash and zuchini, White Wave seasoned tofu and brown rice, and tofu, quinoa, veggies and seasoning (I can't remember what I used for seasoning - this was a long time ago. I think it might have been curry paste).

Dinners were turkey chili, chicken chili (different recipe entirely), a vegetarian dish with beans, corn and textured vegetable protein, and chicken meatloaf. I froze leftovers of the dinners so I didn't have to cook every night - I was single and would get several servings out of the dinners. I have since found some other good recipes that I cook for me and my husband that will make a few meals for us.

These days, for lunch, I make salads with grilled meat and brown rice, quinoa or garbanzo beans. We also like sunflower seeds on our salads.
