I say start with what you can. I struggled with eating for years. When I started the program three years ago I thought the same as you. I don't do fruit much. But now just starting to add veggies into my diet. I enjoy them but who has room for all that food. I think once my body realized how much better I feel with it in my diet I look forward to it. Just these last two weeks I can trying to focus on veggies with meals (lunch and dinner). I like cucumbers because they are not heavy at all and made me feel good when I eat them.

So just do what you can.
