My husband is doing South Beach phase 1 (yes, he needs to do RR but he won't listen so I don't try anymore), so the only browns he can have are black beans and garbanzo beans. Last night I made this easy, yummy dish that is South Beach and RR friendly.
Ingredients
chopped onion
minced garlic
cumin (or you could use chili powder)
Cooked chicken (you can use raw, if so, add to pan when the onions are soft and before you add the beans)
1 can of black beans
salsa
grated cheese
green chili if you live in New Mexico and can get decent green chili
Saute some onion and minced garlic in olive oil. (We use the minced garlic packed in oil that comes in a jar) When it is getting soft, sprinkle some cumin onto it and stir it around.
(add meat now if you are using uncooked chicken, and saute until cooked)
Add a drained, rinsed can of black beans.
Add chopped cooked chicken
Mix in some salsa (and green chili if you are adding that)
When it is all heated nicely, sprinkle grated cheese on top. Then I put a cover on the pan and turn the heat off and serve when the cheese is melted.
