New Recipe - Chicken Athena

This recipe is really really good.

Chicken Athena
1 lb chicken diced
1 TBL Olive Oil
***Or take a rotisserie chicken and dice it up. Much quicker since it is already cooked - one regular sized rotisserie chicken is a little over 1 lb meat.
1 Medium onion - diced (large dices)
14.5 oz can stewed tomatoes
6 oz jar marinated artichoke hearts
1/4 tsp dried rosemary crushed
1/3 cup feta cheese - crumbled

Brown chicken in oil (unless you are using the rotisserie chicken). Add onions and cook 2 minutes. Stir in tomatoes and marinate from artichokes(NOT the hearts - yet). Add the rosemary as well. Cook 10-15 minutes - might take longer - until thickened. Stir frequently. Stir in artichoke hearts and feta cheese. If the hearts are larger cut them up a little.

You can eat this over brown rice or brown rice pasta (or whole wheat pasta). Tonight I ate it between some whole wheat bread and ate it like a sandwich. It was amazing.
