Here's another one I learned on the forum which I use occasionally, especially in the winter. For those not eating dairy, it does include cottage cheese.

I mix 1/2 cup oats with 1/2 cup water and let it sit in a covered microwaveable bowl overnight. In the morning I add one egg and mix it in well, then I add 1/2 cup of cottage cheese and mix it in well. I microwave on high for about 5 or 6 minutes, stirring it about halfway through. I don't cover it, since it spills over the sides if you do.

When I eat it, I add some salt, a tiny amount of butter, about 1/2 teaspoon, and a small amount of Half & Half. I will often have a small shake on the side to round out my protein. I don't usually think of food as "comforting," but I find this particular meal very comforting. Plus, it lasts me all morning.

I'll have to try E.'s version sometime, since I've never tried it without the cottage cheese.
