Re: Trouble with Breakfast
In Response To: Trouble with Breakfast ()

Hi Angela,

I can share with you the breakfast I'm loving right now: overnight refrigerator oatmeal! Someone posted a link on the forum a few weeks ago to some recipes. But, basically, this is what I have been doing for my breakfasts the last few weeks and I love it - plus it is fast!

1/2 cup of rolled oats
about 2/3 cup of greek yogurt (I like nonfat, plain)
fruit, nuts, cinnamon, etc.

I add about 1/2 cup of water to the yogurt to make it more liquid, then stir in the oats. I put it in the fridge overnight in a small container. The liquid soaks into the rolled oats and makes them soft and edible. No cooking required, and they keep in the fridge for many days, so you could make a bunch ahead of time and eat them all week.

I like to add fruit and nuts. Also cinnamon. And depending on where you are with sweeteners, you could add those, too.

It's basically a museli. And you could adjust the amount of yogurt (and/or nuts if you add them), or add protein powder to get your protein needs met.

Hope this helps
