new and lots of questions

Hi,

I read Little Sugar Addicts awhile back and loved it. I was so glad to find this message board today! My kids and I are both sugar sensitive, as well as sensitive to certain foods (tested IGg high for eggs, dairy, some nuts, sugar, honey, certain legumes, oats, and gluten). Over the last couple years we've been working on cutting out these foods and are now to the point where we're completely allergen and sugar-free, eating basically no processed foods, and eating lots of protein (mostly meat due to problems with other protein foods) and veggies.

Things are better overall, but not to where I'd like to be. My 9 year old identical twins are still very prone to blood sugar drops just an hour or two after eating, which leads to very poor behavior at times (anywhere from hyperactivity and name-calling, to meanness, hitting, yelling, or huge tantrums). Once I get them to eat, they are fine. Personally, I still have lots of energy drops throughout the day and get very hungry (I am thin already, so can't lose weight). It seems like we are eating or preparing food all the time!

How do I take this to the next level? I was thinking of going lower and lower carb. to try to even out our blood sugar more, which would mean cutting out things like most grains, fruits, and potatoes (all of which we seem to crave a lot and are maybe sensitive to...?) But after reading this information again, I'm not sure I'm on the right path. Is cutting out these things going to decrease serotonin? This is the opposite of what I want to do, of course! I am overwhelmed by all the options: hypoglycemic diet, Specific Carbohydrate Diet, anti-yeast diet, etc. (I have mild to major IBS and PMS, too, plus I think we all have yeast issues). I also wonder if we are eating too much meat (all organic, though). Does anyone else do this diet while also cutting out dairy, eggs, and nuts?
