So glad you are continuing to work on breakfast! You'll find something that you like. Have you noticed feeling better after breakfast, even though you feel a bit blah about eating it? I sometimes call it my morning coffee...I feel much more alert and ready for the day after my breakfast!
Nuts for me are more of a condiment...or something to top off my other protein. I would have to eat a lot of nuts to get the protein amount I need. And there's a lot of fat in nuts, so again, to get the amount of protein I would need, I'd be eating a lot more fat than my poor stomach would want to handle. You did a great job noticing the protein / carb combo of nuts...interesting, isn't it. Did you check to see how much protein there is in coconut meat?
For beans, they count as either a carb or protein. Are you looking for vegetarian options?
Potatoes and sweet potatoes are a great complex carb for breakfast!
