Hi Kiki! It sounds like you are doing good work figuring out what proteins and browns will work for you at breakfast. These are all really good questions...
What I've been told here is it's better to have beans be either a brown or a protein at any given meal, but not to count them as both at the same time - don't "double dip" is what they tell me. So, if I have beans and rice, I usually choose to count the beans as my protein and the rice as my brown. But if I have chicken and also beans and rice, I might choose to count the beans as my brown along with the rice. Does that make sense?
I love having potatoes with skins or sweet potatoes as my breakfast brown. A lot of people do that - if you like it, it's just fine to have as your breakfast brown.
I also like coconut. It's really nutritious, but unfortunately it is not a great (dense) protein source. An ounce (28g) of most nuts has about 6 or 7 grams of protein. But an ounce of coconut meat has only 1 gram of protein.
What kinds of proteins do you like to eat at breakfast? I can't remember if you said you are vegetarian - do you eat eggs or cheese? Meats? Tofu? We can help you come up with some yummy breakfast ideas.
