It's good that you are sticking with breakfast and trying to make it work. Keep it up. :) I think coconut would be good for breakfast, either the yogurt or the meat. Coconut isn't an actual nut though so yeah, it's safe for a person allergic to tree nuts.
As for beans, you have to either count them as a complex carb or a protein, but not both. I believe Kathleen calls this "double dipping." If you have beans as a protein then you should have something else as a carb.
Potatoes are a good complex carb and it's fine to have them with breakfast. It's just that at step one, we're not having them before bed yet.
