I went to a wedding many years ago and one of the dishes on the buffet was a rice dish made with garlic, sunflower seeds, rice and olive oil. I loved it and recreated it at home and over the years I have changed it around and done variations on a theme. I now add flaxseed oil because I love the taste. I often add crunchy greens like cos lettuce and blanched green beans which creates a texture sensation I just love. Sometimes I will add fresh coriander or a little parsley. Just lately I read that ginger can help raise body temperature and it is great for you so I added about a tsp of diced fresh ginger into my rice (instead of garlic) and added chopped brazil nuts instead of sunflower seeds. Yum.

Co-incidentally one of my friends who is Chinese and loves cooking make a fried rice for us which was similar and soooo yummy too ... it was made with fresh chopped ginger, chicken and olive oil.

I am actually intrigued about your travelling yam cakes. Is the recipe on the website somewhere? I am gluten free which makes it a little more challenging to find something friendly for breakfast when travelling and so I am on the lookout for a good backup that is easy to carry around.
