Hi Kiki
We don't take caffeine out until after step 6, (after taking sugars out) the reason being, it is much harder to do when you still use sugars as they have similar effects. When the sugar is gone, we are more aware of the not so good things about caffeine, and usually want to take it out to be able to feel the best we can.
Don't worry about it now, as you won't know the difference between what sugar does to you and what caffeine does. It stops being confusing after you stop having sugar.
