I made these Vegetarian Lentil Burgers and really liked them - I think they make a wonderful brown, or a good veggie protein source. I wanted to share the recipe with you all.
This recipe is from a website I really like called "101 Cookbooks" by Heidi Swanson. I'm just listing the ingredients and writing down how I made them - but I recommend going to her site to see more details, and look at more of her recipes! Lots of yummy stuff...good ideas for browns and greens. Her photos of the food are really beautiful.
Vegetarian Lentil Burgers
3 cups cooked black lentils
4 large eggs
1/2 teaspoon fine-grain sea salt
1 onion, finely chopped
1 cup toasted fine (whole-grain) bread crumbs
1 tablespoon extra-virgin olive oil (or clarified butter)
Combine lentils, eggs and salt in a blender. Put in a bowl and mix in the onions and breadcrumbs. Let it sit for a few minutes so the breadcrumbs soak up some of the moisture. Then form into patties and fry in the oil until browned - about 8 minutes each side.
The recipe says to make 12 patties. I made 4 big ones - they were really big! I think next time I will make 6.
I didn't have black lentils so I used regular brown lentils from a can - two cans of them, drained and rinsed. I used regular salt in place of sea salt, and I made bread crumbs in the blender out of toasted Ezekiel bread. Came out great!
You can cut the patties in half and use them like a bun (that's what I did - put cheese and chopped hard boiled egg inside!) Or eat them on the side, or as a burger in between two slices of bread.
