Hi Denise,
I just returned from a 3-day vacation.
Brought along whole rye bread and whipped out a couple of slices any time I needed it.
Also brought cooked brown rice.
Also, yam cakes proved to be good to eat at a meal or as a snack on the run.
And nuts - almonds and pecans.
I didn't actually bring it, but I could see myself having apple in wedges dipped in whole sesame tahini (or peanut butter).
Tuna, cold meat, hard boiled eggs, cheese sticks for protein.
And herb tea bags.
Having steady food will help you deal with the Easter sweets you will encounter.
Bring along something you like to do - a book, crochetting, crosswords, etc.
Keep your body fed and your mind busy during downtime.
Getting enough sleep if possible is a big help too.
I wish you luck and a great vacation :)

: Worried, going on vacation. Will have
: access to a kitchen but timing is
: going to be a factor (late meals,
: out for lunch). Looking on line
: for easy recipes and suggestions.
: Stores will not be easily
: accessible. Also, it will be over
: Easter where lots of sweets and
: goodies will be around so this is
: adding to my concern. I am in a
: good place right now and don't
: want to lose that. Trying to plan
: now. All help appreciated.
