Yam cakes are like shake...we all like different flavors and consistencies! I remember the first Ranch after yam cakes became part of the community, and several of us had brought them and shared. I can't remember all the details, but I remember someone who made hers very flat and tiny compared to mine. She had one of those baking stones, and would cook the yam cakes on the stone...and smush them down. Hers were pretty *crispy*. I've had Elaine's, and she makes hers into bars...adds protein powder and peanut butter...and I think the bars are very moist. Have fun experimenting to make them *just right* for you. I think mine are pretty chewy, but they are also soft...and can be a bit crispy on the outside.
