We actually grill year round (usually chicken breast or pork tenderloin or boneless chop), because we don't have a regular oven with a broiler, just a tabletop convection oven. But in the summer, we make side dishes on the grill as well. My favorite is veggie or potato packets in foil. For the potatoes, we cut them up and add a bit of olive oil, and some garlic and onion. For the veggies, I just cut up a bunch of different vegetables and add olive oil or italian dressing. Then we seal them in foil and cook them on the grill. Another really good one is beets with olive oil and garlic cooked in foil on the grill.
We have 2 neighbors with big gardens, and they bring us gifts of vegetables, so often my summer cooking is determined by what goodies we get.
