i have a variety of stuff i use for breakfast. i make muffins, pancakes, waffles and freeze them. i use kathleens GF baking mix in the recipe section. i throw all kinds of stuff in the muffins, like nuts, seeds, carrots, zucchini, jam, etc. also i buy BF bread for toast, buckwheat flakes cereal and GF waffles. brown rice cakes with almond butter or i suppose you could use peanut butter. so i have some quick and easy option for breakfast as well as for snacks. i saw sweet potatoes in a previous post and am gonna try those in my muffins too.
