I'm so glad to learn I can do this program AND be gluten free! I had been GF for 5 months, but this week when I learned it's sugar making me sick, I had a cheeseburger :) The bun gave me a mini reaction similar to how I fee when I eat sugar (bummer). So, I think I'm going to stick with the gluten free a little while longer before trying again.
As for flours, I have been using coconut flour, tapioca flour & homemade nut flours (pecan & almond). They have all worked wonderfully for me & I know exactly what's in them :)
