Wanted to Share this recipe I made this afternoon.
I used to make this with Grands Biscuits years ago. I thought I would try it with Kathleen’s basic whole wheat biscuit recipe and it turned out wonderful. So thought I would share it with you all. Kids would love this recipe.
To make the dough:
2 cups whole-wheat pastry flour
2 tsp baking powder
1/4 milk powder (I took powdered milk and crushed it to make it a very fine powder)
1/2 tsp salt
1/3 cup canola oil
3/4 cup milk
Sift together dry ingredients. Blend in oil to make a mix the consistency of corn meal. Make a hollow in the center of the flour mixture and pour in the milk. Mix with a fork until well blended. You may have to add a little more flour.
Turn on floured board and knead lightly 10 to 15 times.
For the filling:
12 oz tuna or chicken (canned) – drained well
1/3 cup chopped onion
1/3 cup mayonnaise
1/8 tsp black pepper
1 cup shredded cheddar cheese
Divide dough into four equal balls. Roll each ball into a flat round circle (as flat as you can roll it). Spoon 1/4 of the meat mixture into the middle of the dough. Top with 1/4 cup cheese. Fold over the dough so it resembles a half circle. Flute the edges.
Bake at 350 degrees for 15 minutes.
I don’t do too well on flours so this will be a once in a great while recipe. But I really liked it. Not enough protein in it so you will have to pair it with more protein.
