I just learned that yes, baked oatmeal can be made in the slow cooker. If this is new to you, too, I wanted to let you know that I tried it and it worked out great. I found a recipe online for crock pot baked oatmeal, and re-read the R.R. baked oatmeal recipe and just improvised. It seems to be a very forgiving recipe! I used a rather small slow cooker that I call my *quick* cooker, and the small batch of baked oatmeal took about 2 hours. I used: Gluten free oats, an egg, yogurt, milk, butter, baking powder and cinnamon, vanilla, nutmeg, and walnuts. I made another batch without yogurt, and while I thought both came out very well, the batch with the yogurt was very easy to slice and did not crumble, which might be perfect for freezing individual slices, or breakfasts on the go.
