I'm having an afternoon snack today. I forget that some of my gardening is hard work, and I didn't add in extra at lunch...and I was feeling a bit blood sugar crashy. Just glad I knew what it was, and know what to do about it.

I tried a new recipe today that has you soak your flour for 12 to 24 hours in yogurt, kefir or buttermilk before adding the rest of the ingredients and cooking. I used cocnut kefir for the soak, left the sugar out, and used buckwheat and brown rice instead of wheat. They were ok, but too much baking soda...I'm thinking a high altitude thing....and the muffins sunk. I haven't made banana muffins for a long time, and these turned out pretty good...I'll try it again.
