Hi Jill,
I really like the combination of brown rice flour and buckwheat. Buckwheat is kind of *gluey* like oats, so it holds together nicely. I usually make pancakes / waffles / quick bread using this combination. And my latest adventure has been making sourdough pancakes...again, I've been using the brown rice / buckwheat combination.
