Hi, I am GF, too. In the Radiant Recipes Cookbook, most of the recipes are GF, and have a GF flour blend of brown rice flour and oat flour. In our case, we would use the GF oat flour. The pancake mix you founds sounds very healthy. I am getting braver about making up my own mixes of flours. Best wishes!
