: First of all Kathleen I hope you are

: I made these tonight and they were so
: good I needed to share the recipe.
: 8 thin chicken cutlets (3 oz each). I
: made my own. I took 4 (6 oz)
: chicken breasts cut them in half
: and pounded then down. Tip: put
: the chicken in-between two pieces
: of plastic wrap and pound a way
: with a meat pounder. LOL don't
: know the term for it.
: 1/2 cup whole wheat Italian seasoned
: bread crumbs. I got bread crumbs
: (100% whole wheat) from whole
: foods and added my own Italian
: seasoning to it.
: 1/2 cup fresh grated Parmesan cheese
: 2 TBL Parmesan cheese (the kind in
: the green shaker can)
: 1/4 cup + 2 TBL egg beaters
: 5 oz frozen chopped spinach, thawed
: and squeezed dry (I could only
: find a 10 oz package so I just
: used half and froze the second
: half)
: 1/2 cup ricotta cheese
: 2 cups grated mozzarella cheese
: 1 cup marinara sauce (check the
: label)
: salt and pepper to taste.
: Olive oil
: Season the cutlets with salt and
: pepper. Preheat oven to 450
: degrees F. Lightly spray baking
: dish
: Combine breadcrumbs and 2 TBL
: Parmesan cheese in one bowl(I used
: the Parmesan cheese that you find
: in that green shaker can for this
: part; thought it would mix better
: with the bread crumbs and it did
: ) and 1/4 cup egg beaters in
: another bowl.
: In another bowl mix 1 cup mozzarella
: cheese, 1/2 cup fresh grated
: Parmesan cheese, spinach, 2 TBL
: egg beaters and ricotta cheese.
: Mix well.
: Spread about 2 TBL spinach mixture
: onto chicken cutlet. Role it up.
: Dip it in the egg and then role it
: in the bread crumbs. Place in pan
: seam side down. Do this with the
: remainder of the cutlets. Lightly
: spray the cutlets with olive oil.
: (this made it very nice and
: crispy). Will try this technique
: when I make chicken fingers next
: time.
: Bake 25 minutes. Remove from oven.
: Top with Sauce and remainder of
: mozzarella cheese. Return to oven
: and bake for an additional 3
: minutes or until cheese it melted.
