Home fries sound absolutely delicious, Allison! Maybe I'll make some this weekend. I like to make baked oatmeal, either in the oven or in my crock pot/slow cooker as a brown with breakfast these days. I use Bob's gluten free oatmeal. When I have toast, I like Food for Life's gluten free brown rice bread, but I double -toast it or otherwise in my opinion the texture is not as good. I love your idea for making yam cakes, I haven't done that in a while. My new idea is to make Japanese rice balls, with a little seaweed wrapping around them, maybe with a little salmon or veggie inside: onigiri! I thought those would be perfect for planned snacks.
